Why I love Quiche for Breakfast

I am a huge fan of quiche, and I have been for a long time! My grandmother and mother and I used to go to a small restaurant in a nearby historical village called Cauley Square, where we had lunch at the Tea Room for special occasions.

My favorite thing to get there was the quiche, and they always had two options. My favorite was the bacon and egg quiche recipe, and they always had a beautiful dessert table.

We still go there from time to time, but after the passing of my grandmother in 2010, it stopped being a regular place to go and instead, we save it for special occasions. But...dang, I still really, really love me some quiche!

This Southwest Quiche is so simple to make; all you have to do is mix the egg mixture and pour everything together into a premade quiche crust! How could you go wrong?!

  • Pre-made pie crust (refrigerator section)
  • Diced ham
  • Red peppers, diced
  • Green peppers, diced
  • Shredded cheddar cheese
  • eggs
  • milk - you can use heavy cream or milk in this recipe
  • oregano
  • thyme
  • salt
  • black pepper

Directions how to make this Southwest Quiche

You will begin by doing what we all do first - preheat oven to 375 degrees.

Spread a thawed out refrigerated pie crust into a pie plate. Press the quiche crust down into the bottom and up onto the sides, ensuring that there is even coverage.

Add in your chopped ham and both the red and green peppers.

Next add your layer of shredded cheddar cheese to the quiche crust.

In a separate bowl, add in your eggs and milk and whisk them together really well.

Add in all of the spices (oregano, salt, pepper, thyme) and mix it well.

Then pour over the egg mixture over the ingredients that are already in the crust.

Bake your Southwest Quiche for 15 minutes at 375 degrees F.

Then you are going to open the oven and add tin foil to cover the crust only. Reduce the heat to 350 degrees F and continue to bake it for 25-30 minutes, or until a knife inserted into the center of the quiche comes out clean.

Let your Southwest quiche stand for five minutes so that it can cool and "set," and then cut it into 8 slices.

Of course, if you are eating this for dinner, or have a rather large appetite, don't be afraid to cut larger portions! If I were serving it for dinner, I would add a small tossed greens salad and cut it into 4-6 portions for adults.

Substitutions and Variations for this Southwest Quiche

  • Make it low carb - Make this a southwestern crustless quiche and skip the carbs from the pie crust!
  • Vegetarian - make this Southwest Quiche vegetarian by omitting the ham! You can also use a milk substitute or a cheese substitute.
  • Green Chiles - Replace the Green peppers with Hatch Green CHILES for a smokier flavor.
  • Pepper Jack Cheese - If you want a more Mexican quiche Food Network would be proud of, you can substitute half of the cheddar cheese with pepper jack. You can also simply replace the cheddar cheese with pepper jack, but it will have a lot more spice to it!
  • Sausage Quiche - I love sausage OR ham in my quiches, so it is fine to make this a Southwestern sausage quiche. Just replace the diced ham with cooked crumbled sausage.

  • 1 pie crust refrigerator section
  • 1 cup ham diced
