If you live in the South (or even just visited) you know our motto when it comes to food is “make it sweet or deep fried.” Seriously, people fry everything from pickles to cookies down here, y’all. A few weeks ago I was experimenting with a classic Buttermilk pie recipe and realized I didn’t have a pie crust on hand. I sent Bryan to the store with an admonition to buy a pie crust. When he came back home he told me, “I wasn’t sure what kind you wanted so I bought several different kinds.” I used the deep dish pies crusts with the buttermilk pie and left the other crusts sitting on the stovetop temporarily. As I was putting pies in the oven, Bryan walked by. “You know, this pie crust looks lonely,” he commented. “Maybe you should make more pies.” Is that a blatant excuse to get more pies or what? And, it probably didn’t do any good. I gave away a lot of pie. Since I had shredded coconut, I decided to make a this easy Southern Coconut Pie Recipe.

This pie makes a ton of filling when the coconut is added, so I used two deep dish pie crusts to hold it all. Before cooking this pie, cover it with aluminum foil to keep the crust from getting too brown. Also, place the pie on a cookie sheet before placing it in the oven so that if any filling spills you won’t have a mess to clean up. I added some simple swaps to make the recipe Gluten Free also.

Easy Southern Coconut Pie Recipe

Ingredients

  • 2 (9 inch deep dish) pie shell, unbaked (or use gluten free pie crusts)
  • ½ cup butter, softened
  • 2 cups sugar
  • 3 Tablespoons all purpose flour OR use gluten free all purpose flour
  • 3 eggs, beaten
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • 1 1/2 cups shredded coconut

Instructions

  1. Preheat oven to 350 degrees.
  2. Cream butter and sugar with mixer until blended.
  3. Stir in flour and eggs. Continue to mix until blended.
  4. Add buttermilk and vanilla. Mix well.
  5. Stir in shredded coconut.
  6. Pour mixture into pie shell and cover with aluminum foil. (This prevents the edges of the crust from burning.)
  7. Bake for 45-50 minutes or until a knife inserted into the middle of the pie comes out clean.
  8. Allow to cool before serving.

    Great recipe. I absolutely love coconut cream pie! I also love that you used these free-range eggs. We recently started using free-range after buy conventional for so long and there really IS a diffrence. The color, the size, the taste.

    That pie looks great and it is so nice of you to use all those crusts. I have never had that flavor pie but it seems like a different taste and we all love coconut.
